Cereals cooked in different ways reflect progress of mankind. Baking, as it is known today, was introduced in India in 18th century and was confined to section of the society. However, nowadays because of awareness, baked products such as bread, cakes, biscuits etc are consumed in almost every household in India.<\/p>\r\n&nbsp;\r\n\r\n<strong>2.\u00a0 OBJECTIVES<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">1.\u00a0\u00a0\u00a0\u00a0 Describe the meaning of baking<\/p>\r\n<p style=\"text-align: justify\">2.\u00a0\u00a0\u00a0\u00a0 Understand the changes happening during baking and<\/p>\r\n<p style=\"text-align: justify\">3.\u00a0\u00a0\u00a0\u00a0 To learn preparation of different bakery products.<\/p>\r\n&nbsp;\r\n\r\n<strong>3.\u00a0 DEFINITION OF BAKING<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">The changes undergone by a dough or batter, as it bakes in the oven by hot air is called as baking process. Some of the examples of baked products are biscuits, cakes, puffs, bread, bun, soup sticks, cookies, macrons, pastries, pizza base etc<\/p>\r\n&nbsp;\r\n\r\n<strong>4. CHANGES TAKING PLACE DURING BAKING<\/strong>\r\n\r\n&nbsp;\r\n\r\n<strong><em>a. Formation and expansion of gases<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Some gases are already present in the dough, as in proofed bread dough and in sponge cake batters. As they are heated, the gases expand and leaven the product. Some gases are not formed until heat is applied. Fast acting baking powder form gases rapidly when first placed in the oven. Steam is also formed as the moisture in the dough is heated.<\/p>\r\n&nbsp;\r\n\r\n<strong>b. <em>Trapping of gases in the air cell<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Gases are formed and trapped in the network formed by the proteins in the dough. These proteins are primarily gluten and sometimes egg protein. Without gluten or egg protein, the gases would escape and product would not be leavened.<\/p>\r\n\r\n<\/div>\r\n<div>\r\n\r\n&nbsp;\r\n\r\n<strong>c. Coagulation of proteins<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">At the right temperature protein coagulate or solidify giving a structure to the baked products. Hence maintaining correct baking temperature is very important.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>d. Evaporation of water<\/strong><\/p>\r\n<p style=\"text-align: justify\">Moisture in the dough evaporates during the baking process, when heat is applied.<\/p>\r\n&nbsp;\r\n\r\n<strong>e. Melting of shortening<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Different shortening melts at different temperature in any of baked products. As they melt, they surround the flour cells and make product soft.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>f. Browning of surface and crust formation<\/strong><\/p>\r\n<p style=\"text-align: justify\">Browning occurs when sugar caramelizes. Other than sugar milk, and egg also helps for browning reaction.<\/p>\r\n&nbsp;\r\n\r\n<strong>5. ROLE OF INGREDIENTS<\/strong>\r\n\r\n&nbsp;\r\n\r\n<strong><em>Flour<\/em><\/strong>\r\n<ul>\r\n \t<li style=\"text-align: justify\">\u00a0Forms the foundation of breads, cakes, biscuits, pastries and cookies.<\/li>\r\n \t<li style=\"text-align: justify\">\u00a0Gluten a protein present in flour plays an important role in formation of dough<\/li>\r\n \t<li style=\"text-align: justify\">Flour gives structure to product.<\/li>\r\n \t<li style=\"text-align: justify\">east grows and releases carbon di oxide within dough, giving a right structure. The flour should be tested before using for any bakery preparation.<\/li>\r\n<\/ul>\r\n<strong><em>Fats<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">1.\u00a0\u00a0\u00a0\u00a0 Acts as an enriching agent<\/p>\r\n<p style=\"text-align: justify\">2.\u00a0\u00a0\u00a0\u00a0 Used for lamination of various dough especially egg puff dough<\/p>\r\n<p style=\"text-align: justify\">3.\u00a0\u00a0\u00a0\u00a0 Gives color to various pastries<\/p>\r\n<p style=\"text-align: justify\">4.\u00a0\u00a0\u00a0\u00a0 Acts as an emulsifying agent<\/p>\r\n<p style=\"text-align: justify\">5.\u00a0\u00a0\u00a0\u00a0 Provides softness to baked products<\/p>\r\n<p style=\"text-align: justify\">6.\u00a0\u00a0\u00a0\u00a0 It gives volume to cakes and sponges.<\/p>\r\n\r\n<\/div>\r\n<div>\r\n\r\n&nbsp;\r\n\r\n<strong><em>Leavening agents<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Baked products made are light and easily chewed because baked products made with leavening have an open or more porous grain than and unleavened products. The digestive juices come in contact with food and make it easily digestible. Baked products made with leavening agent are more palatable and appetizing than those made without leavening.<\/p>\r\n&nbsp;\r\n\r\nThe leavening of baked products may be brought about by four general methods\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">a)By means of air (mechanical) BY CREAMING ACTION: where air is whipped into shortening and sugar during creaming and expands when heated in oven to give more volume.<\/p>\r\n<p style=\"text-align: justify\">b)BY BEATEN EGGS: We all know that when eggs are beaten they become fluffy and foamy. This helps to leaven the product.<\/p>\r\n<p style=\"text-align: justify\">c) Liberating CO2 gas in dough by means of yeast action. An example of this method is bread.<\/p>\r\n<p style=\"text-align: justify\">a)\u00a0 Producing leavening action by use of chemicals. Example of such chemicals are Baking soda, baking powder, baking cream and ammonium carbonate.<\/p>\r\n&nbsp;\r\n\r\n<strong><em>Sugar<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Provide sufficient food to yeast to produce carbondioxide gas. Being a hygroscopic substance retains moisture, it helps to keep the product fresh and moist for longer time. Imparts golden brown colour to crust. Improves taste and flavour of the product.<\/p>\r\n&nbsp;\r\n\r\n<strong><em>Salt<\/em><\/strong>\r\n<ul>\r\n \t<li style=\"text-align: justify\">Strengthen gluten formation<\/li>\r\n \t<li style=\"text-align: justify\">Salt imparts taste to bread<\/li>\r\n \t<li style=\"text-align: justify\">\u00a0It is also one of the most important constituent to bring out the flavor of bread<\/li>\r\n \t<li style=\"text-align: justify\">\u00a0Being a hydroscopic substance, it helps to keep the bread fresh and moist for longer time<\/li>\r\n \t<li style=\"text-align: justify\">Enhances color<\/li>\r\n \t<li style=\"text-align: justify\">Acts as a preservative<\/li>\r\n \t<li style=\"text-align: justify\">Control yeast growth\/yeast action<\/li>\r\n<\/ul>\r\n<strong><em>Water<\/em><\/strong>\r\n<ul>\r\n \t<li>Sources of moisture which strengthen gluten<\/li>\r\n \t<li>Helps to mix and dissolve the ingredients<\/li>\r\n \t<li>Gives a rise to the sponges by changing itself into stream<\/li>\r\n \t<li>\u00a0Gives volume in production of breads<\/li>\r\n<\/ul>\r\n<\/div>\r\n<div>\r\n\r\n<strong><em>Eggs<\/em><\/strong>\r\n<ul>\r\n \t<li>Acts as an excellent glaze for all products<\/li>\r\n \t<li>Very good moisturizing agent<\/li>\r\n \t<li>Coagulates and gets right shape in baked goods<\/li>\r\n \t<li>Excellent binding agent<\/li>\r\n<\/ul>\r\n<strong><em>Nuts<\/em><\/strong>\r\n<ul>\r\n \t<li style=\"text-align: justify\">A variety of dried and preserved fruits and nuts can be used in baked products to give different type of flavours and finishes<\/li>\r\n \t<li style=\"text-align: justify\">It is usually necessary to wash dried fruits before use, with a liberal amount of water and dried.<\/li>\r\n \t<li style=\"text-align: justify\">\u00a0Care must be taken so that fruit does not absorb too much of water and become soft.<\/li>\r\n \t<li style=\"text-align: justify\">After draining the fruits should always be added last to ensure even distribution throughout butter\/ dough with minimum damage.<\/li>\r\n<\/ul>\r\n<strong><em>Flavours<\/em><\/strong>\r\n<ul>\r\n \t<li style=\"text-align: justify\">Flavor may be defined as sensation of smell and taste mingled.<\/li>\r\n \t<li style=\"text-align: justify\">Flavor is really the ingredient which helps the baker to add uniqueness to his product.<\/li>\r\n \t<li style=\"text-align: justify\">Appearance may be an eye catching factor in first sale of any baked product but flavor is one of the reason for the remaining sale.<\/li>\r\n<\/ul>\r\n<strong><em>Color<\/em><\/strong>\r\n<ul>\r\n \t<li>The use of colour is important as use of flavour.<\/li>\r\n \t<li>The eye appeal is enhanced by use of colour.<\/li>\r\n \t<li style=\"text-align: justify\">Colour should not be added where the processed recipe has ample ingredients present to give products the desired colour.<\/li>\r\n<\/ul>\r\n<\/div>\r\n<div>\r\n<p style=\"text-align: justify\">The stages involved in the preparation of bread are<\/p>\r\n&nbsp;\r\n\r\n1.\u00a0\u00a0\u00a0\u00a0 The preparation of dough\r\n\r\n2.\u00a0\u00a0\u00a0\u00a0 Fermentation of dough\r\n\r\n&nbsp;\r\n\r\n<strong><em>Spices<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0 The spices are used in comparatively small quantities in baked products.<\/p>\r\n<p style=\"text-align: justify\">\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0 They are quite important ingredient.<\/p>\r\n<p style=\"text-align: justify\">\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0 Even small quantities it improves the eating quality of products as well as the characteristics.<\/p>\r\n&nbsp;\r\n\r\n<strong>6.\u00a0 COMMERCIAL BAKERY PRODUCTS<\/strong>\r\n\r\n&nbsp;\r\n\r\n<strong>6.1. Bread<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">It is a fermented product obtained by fermentation of dough. By the action of yeast dough is fermented and baked at high temperature. The ingredients used for bread preparation are wheat flour (refined), yeast, shortening, sugar, salt, milk etc.,<\/p>\r\n&nbsp;\r\n\r\n<strong><em>Preparation of bread<\/em><\/strong>\r\n\r\n&nbsp;\r\n\r\nThe stages involved in the preparation of bread are\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">1.\u00a0\u00a0\u00a0\u00a0 The preparation of dough<\/p>\r\n<p style=\"text-align: justify\">2.\u00a0\u00a0\u00a0\u00a0 Fermentation of dough<\/p>\r\n<p style=\"text-align: justify\">3.\u00a0\u00a0\u00a0\u00a0 Baking<\/p>\r\n&nbsp;\r\n\r\n<strong>1)\u00a0 The preparation of dough<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">The common methods that are used for preparation of dough are<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">i.Straight dough method<\/p>\r\n<p style=\"text-align: justify\">ii. Sponge dough method<\/p>\r\n<p style=\"text-align: justify\">iii. Mechanical dough<\/p>\r\n&nbsp;\r\n\r\n<strong><em>i)\u00a0 <\/em><em>Straight dough method<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">This is a single step process in which all the ingredients are mixed together in a single batch. Mixing is continued until the dough attains desired smoothness and elasticity. The advantage of this method are minimum labour and less time taken for fermentation and gives better flavor.<\/p>\r\n\r\n<\/div>\r\n<div>\r\n\r\n&nbsp;\r\n\r\n<strong><em>ii) Sponge dough method<\/em><\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Formation of sponge and development of dough. The sponge generally contains about 50-60% of total flour to be used for the dough. This flour is made in to dough and it is fermented. The fermented dough is mixed with the remaining quantity of flour and whole mass to be fermented once again.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong><em>iii) Mechanical dough<\/em><\/strong><\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">This method of mixing ingredient and dough formation are done mechanically under controlled conditions of pressure<\/p>\r\n&nbsp;\r\n\r\n<strong>2) Fermentation of dough<\/strong>\r\n\r\n&nbsp;\r\n\r\nThe prepared dough is allowed to ferment at 30-350C for 1 hour. After 1 hour, it is knocked backed and allowed to ferment once again. The fermentation process is called as proving. After proving is made, it is placed in bread pans and allowed for final proving.\r\n\r\n&nbsp;\r\n\r\n<strong>3) Baking<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">After final proving, egg white is coated at top of dough and baked at 4400F for 30 minutes. After baking it is cooled and packed. The shelf life of bread is just 3 days. The upper brown portion of bread is called crust. The inner portion is called as crumb.<\/p>\r\n&nbsp;\r\n\r\n<strong>6.2. BUNS<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">They are also like bread, but proved in round shape instead of placing it in bread pans. Otherwise, same steps and same dough is used for bread and bun.<\/p>\r\n&nbsp;\r\n\r\n<strong>6.3 BISCUITS<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Biscuits are one of the favourite bakery products consumed by all sections of the society. The ingredients used are refined wheat flour, sugar, shortening, baking powder, vanilla essence.<\/p>\r\n&nbsp;\r\n\r\n<strong><em>Preparation of biscuits<\/em><\/strong>\r\n\r\n&nbsp;\r\n\r\nThree steps are followed in the preparation of biscuits they are\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">a)\u00a0 Preparation of dough<\/p>\r\n<p style=\"text-align: justify\">b) Sheeting and shaping,<\/p>\r\n<p style=\"text-align: justify\">c) Baking<\/p>\r\n<p style=\"text-align: justify\">d) Cooling<\/p>\r\n\r\n<\/div>\r\n<div>\r\n<p style=\"text-align: justify\"><strong>\u00a0 a)\u00a0\u00a0\u00a0 Preparation of dough<\/strong><\/p>\r\n<p style=\"text-align: justify\">1)\u00a0 Scale dry ingredients<\/p>\r\n<p style=\"text-align: justify\">2)\u00a0 sift refined wheat flour and baking powder together then ass creamed fat and sugars and make it into soft dough. If necessary, add water\/milk during dough preparation.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>b)\u00a0 Sheeting and shaping<\/strong><\/p>\r\n<p style=\"text-align: justify\">The dough is rolled in sheets of desired thickness; by using biscuit mould, biscuits are shaped out.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>c) Baking and cooling<\/strong><\/p>\r\n<p style=\"text-align: justify\">The shaped biscuits are then baked at 170-2000C for 20-30 minutes, it is then cooled and packed.<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>d) Variation\u00a0<\/strong><\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">Soya flour, sorghum flour and any type of flour can be incorporated at 15-20% with refined wheat flour for the preparation of biscuits.<\/p>\r\n&nbsp;\r\n\r\n<strong>6.4. CAKES<\/strong>\r\n\r\n&nbsp;\r\n\r\nCakes are of two types\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">1.\u00a0\u00a0\u00a0\u00a0 Shortened cakes \u2013 those containing shortening<\/p>\r\n<p style=\"text-align: justify\">2.\u00a0\u00a0\u00a0\u00a0 Un shortened cakes \u2013 those made without fat called sponge cakes<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">Ingredients: The ingredients used for preparation are refined wheat flour, egg white or whole egg, milk, sugar, shortening and leavening agents.<\/p>\r\n&nbsp;\r\n\r\n<strong>METHODS:<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\"><strong>Batter Preparation :<\/strong> Cake batter can be prepared by 2 methods<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">Quick Mixing : All dry ingredients (flour, sugar, baking powder) are mixed together. The flavouring agent is mixed with milk and added to flour and mixed. The mix is added and again mixed well in electric mixer for 2 mins<\/p>\r\n<p style=\"text-align: justify\">Conventional mixing method : Weigh all ingredients, sift refined wheat flour , baking powder, cream, fat and sugar.<\/p>\r\n\r\n<ul>\r\n \t<li>Add egg to creamed fat<\/li>\r\n \t<li style=\"text-align: justify\">Add flour slowly without formation of lumps<\/li>\r\n \t<li style=\"text-align: justify\">Stir well if necessary add milk so that it attains better consistency, add vanilla essence<\/li>\r\n \t<li style=\"text-align: justify\">Pour it in a greased plate and bake at 1900C for 30 mins.<\/li>\r\n<\/ul>\r\n<\/div>\r\n&nbsp;\r\n\r\n<strong>Unshortened cakes :<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Angel cakes: Beat the egg white until frothing, then add cream of tartar and salt, continue beating until desired stiffness is attained<\/p>\r\n&nbsp;\r\n<p style=\"text-align: justify\">Add flour in small amount to egg white, add sugar, mix well, till a smooth batter is obtained. Transfer batter to cake pan. Bake at 190 C for 30 min<\/p>\r\n&nbsp;\r\n\r\n<strong>Yellow sponge cakes<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Beat the whole egg, add sugar and beat again, add salt, lemon juice, water and mix well. Add flour in small quantity and mix well till a smooth batter is obtained. Transfer batter to cake pans and bake at 190 C for 30 min.<\/p>\r\n&nbsp;\r\n\r\n<strong>6.5. COOKIES<\/strong>\r\n\r\n&nbsp;\r\n\r\nCookies are\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Referred to as small sweet cakes. In our country it is known as biscuits. According to the recipe adopted and mixing method cookies are classified into two types they are batter type and foam type cookies<\/p>\r\n&nbsp;\r\n\r\n<img class=\"aligncenter size-full wp-image-171\" src=\"http:\/\/hsp06.epgpbooks.inflibnet.ac.in\/wp-content\/uploads\/sites\/247\/2019\/05\/Untitled-35.png\" alt=\"\" width=\"366\" height=\"250\" \/>\r\n<div>\r\n<p style=\"text-align: justify\">Care must be taken while choosing the ingredients. Quality ingredients and correct method of processing should be followed to produce a high quality product.<\/p>\r\n<p style=\"text-align: justify\">Ingredients<\/p>\r\n<p style=\"text-align: justify\">Refined wheat flour, butter , castor sugar, egg, salt, vanilla essence<\/p>\r\n&nbsp;\r\n\r\n&nbsp;\r\n\r\n<strong>METHOD OF PREPARATION<\/strong>\r\n\r\n&nbsp;\r\n\r\n1. One stage method or all in one method\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">In this method of making cookie dough, all ingredients ((i.e.refined flour, butter , castor sugar, egg, salt, vanilla essence) are scaled and mixed at one stretch.<\/p>\r\n&nbsp;\r\n\r\nThe order of mixing is as follows\r\n<ul>\r\n \t<li>First the dry ingredients with leavening agent<\/li>\r\n \t<li>Then liquid \/ wet ingredients<\/li>\r\n \t<li>The flavouring<\/li>\r\n \t<li>Nuts or choco chips, if any.<\/li>\r\n<\/ul>\r\n<strong>2.\u00a0 Creaming method<\/strong>\r\n<ul>\r\n \t<li>Cream fat with sugar<\/li>\r\n \t<li>Slowly start adding eggs a little at time<\/li>\r\n \t<li>Mix flour with raising agents and fold into creamed mixture<\/li>\r\n<\/ul>\r\n<\/div>\r\n<div>\r\n\r\n<strong>SPONGE<\/strong>\r\n\r\n&nbsp;\r\n\r\nIn this\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">a)\u00a0\u00a0\u00a0\u00a0 Place eggs and sugar in a clean bowl and start whisking it.<\/p>\r\n<p style=\"text-align: justify\">b)\u00a0\u00a0\u00a0\u00a0 Mix flour with raising agents and add nuts if any. Fold flour mixture to eggs, once it is light and foamy.<\/p>\r\n<p style=\"text-align: justify\">c)\u00a0\u00a0\u00a0\u00a0 Pipe mixture to mould and bake them till done.<\/p>\r\n&nbsp;\r\n\r\n<strong>MACAROONS<\/strong>\r\n\r\n&nbsp;\r\n<p style=\"text-align: justify\">Macaroons are a very popular type of cookie which has a demand all over year. It is composed of egg white, sugar and nuts like almond, cashewnut, coconut.
